Ingredients
1 Salmon Fillet
1 diced Red Chilli
2 cloved Garlic crushed
1 teaspoon chopped Ginger
1/2 chopped Lemongrass
2 teaspoon chopped Coriander
1 cup Stir fry Vegetables
60g Soba Noodles
1/2 teaspoon black or white sesame seeds
Method
Cut half the salmon into small pieces, and with the other half of the salmon chop to nearly a puree, then mix both of the salmon and half of the lemongrass, ginger, garlic, chilli and half the coriander, season with salt and pepper.
Divide into 2 patties.
Place a non stick fry pan on a med high heat with a teaspoon of oil and cook the patties for 2-3 minutes each side.
Place another non stick fry pan on a med to high heat, add a little oil and the veg, ginger, garlic, chilli, lemongrass and cook for 3-4 minutes. Cook the noodles as per packet instructions.
Serve with the sesame seeds sprinkled on top.
