Apple & Mango Raw Bar

Serves 6


1 cup of Oats

1/2 cup of Dates (stones removed)

1/2 cup of Desiccated Coconut

1/4 cup of Dried Mango (or dried fruit of your choice)

1 cup Dried Apple

1 teaspoon Cinnamon

2 tablespoons Melted Coconut Oil

3 tablespoon Maple Syrup


Place all ingredients into a food processor until combined

Press into a lined baking tin

Place in fridge until set

Cut into 6 pieces

Homemade Muesli

30g per serve


2 cups of Oats

1/2 cup of Chopped Nuts

1 tablespoon melted Coconut Oil

3 tablespoon Maple Syrup

1 teaspoon Cinnamon

1 teaspoon Ginger

4 tablespoon Mixed Seeds


Mix together

Lay flat in a tray

Bake at 180 for 20 minutes or until toasted.

Leave to cool

Store in an airtight container

Salmon Fish Cakes

Serves 1


1 Salmon Fillet

1 diced Red Chilli

2 cloved Garlic crushed

1 teaspoon chopped Ginger

1/2 chopped Lemongrass

2 teaspoon chopped Coriander

1 cup Stir fry Vegetables

60g Soba Noodles

1/2 teaspoon black or white sesame seeds


Cut half the salmon into small pieces, and with the other half of the salmon chop to nearly a puree, then mix both of the salmon and half of the lemongrass, ginger, garlic, chilli and half the coriander, season with salt and pepper.

Divide into 2 patties.

Place a non stick fry pan on a med high heat with a teaspoon of oil and cook the patties for 2-3 minutes each side.

Place another non stick fry pan on a med to high heat, add a little oil and the veg, ginger, garlic, chilli, lemongrass and cook for 3-4 minutes. Cook the noodles as per packet instructions.

Serve with the sesame seeds sprinkled on top.
